Sauteed Spinach with Shallots and Garlic

This simple spinach side dish is a quick and easy way to prepare this nutritious and delicious leafy green vegetable. Feel free to add a bit of shredded cheese for a real treat!

Ingredients
2 tablespoons olive oil
1 large shallot, sliced thin
2 pounds (or 3 10-ounce bags)fresh spinach, washed and stems discarded
1 garlic clove, sliced
salt and pepper to taste

Instructions

  1. Heat oil in a large skillet over medium-high heat. 
  2. Add shallot and garlic and sauté until it just begins to turn translucent. 
  3. Add spinach and cook, stirring frequently, until it is limp and bright green. 
  4. Season with salt and pepper to taste. Serve.
