Spinach Quiche

Ingredients
One 9" pastry shell, baked
1/2 cup diced cooked ham
10 ounces frozen chopped spinach or 2 cups packed fresh spinach, chopped
2 tablespoons chopped onion
2 tablespoons butter
3 eggs
1-1/2 cups half-and-half
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon nutmeg
1/4 cup Gruyere cheese

Instructions

Saute ham, spinach, and onion in 2 tablespoons butter until all liquid has evaporated. In a separate bowl, beat eggs with cream and seasonings. Add to other ingredients, blend, and pour into pie shell. Bake at 375 degrees F for 40 minutes or until set. Cool and serve.
