I would omit the prosciutto and use dark chocolate instead. I eat figs with chocolate every night when in season as a dessert. Dark chocolate goes well with any kind of blue cheese.
I would like to do a vegetarian recipe using figs. Do you have other ideas for stuffing these delicious fruit without me? How would this one be if I just left all the prosciutto?
