Apple Cinnamon Waffles

These waffles just taste like fall! The recipe comes courtesy of the Mountain Fare Inn in Campton, New Hampshire.

Ingredients
1-1/2 cups all-purpose flour
1/2 cup whole wheat flour
1 tablespoon baking powder
2 teaspoons brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
3 eggs, separated
1 cup milk
1/4 cup butter, melted, plus extra for waffle iron
1 teaspoon vanilla extract
1/2 sweet apple, such as Fuji or Gala, cored, and grated

Instructions

Preheat waffle iron.

In a bowl, whisk together flours, baking powder, brown sugar, cinnamon, and salt.

In the bowl of a stand mixer, beat egg whites until soft peaks form. Set aside.

In another bowl, whisk together egg yolks, milk, butter, and vanilla. Stir egg yolk mixture into dry mixture until combined (some lumps are fine). Gently fold in egg whites, then fold in apples.

Brush melted butter over hot waffle iron. Spoon batter into waffle iron and cook for 3 to 5 minutes, or until nicely browned.
