Oatmeal Chocolate Chip Cake

What do you get when you combine the best parts of oatmeal chocolate chip cookies and cake? This quick, easy, and delicious Oatmeal Chocolate Chip Cake! Making this for a kid’s birthday treat? Try substituting M&Ms for the chocolate chips.

Ingredients
1-3/4 cups boiling water
1 cup old-fashioned oats
1/2 cup (1 stick) butter or margarine
1 cup brown sugar
1 cup granulated sugar
2 eggs
1-3/4 cups sifted all-purpose flour
1 tablespoon unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 package (12 ounces) semisweet chocolate chips
3/4 cup chopped nuts (optional)

Instructions

Preheat oven to 350°F. Lightly grease a 9x13-inch baking dish.

In a bowl, pour boiling water over oats and let stand for 10 minutes. Add butter and stir until melted. Add sugars and eggs and stir until well combined.

In a separate bowl, sift together flour, cocoa powder, baking soda, and salt. Add to oat mixture and mix well. Pour into baking pan and sprinkle with chocolate chips and nuts, if using. Bake for 45 to 55 minutes. Cool completely before serving.
