Swapped out the vinegar with undiluted apple cider vinegar and it has a great sour then sweet taste to it. The sugar help to cut the acid and gave the watermelon and cucumber a slight crunch coating.
This sounds intriguing but I read it twice and don't see any mention of sugar in the recipe. ??
The 2nd ingredient on the recipe under rice vinegar is Sugar 2 tablespoons
hi; I think she is saying the sugar in the Apple Cider Vinegar added flavor; one could use any type of Vinegar, or Lemon/Lime/Orange Juice to the Mint Salad;
Try it with bell peppers. Delicious!
I thought I might take a moment to offer up a variation on this. It is as yummy as you might think and simple as can be. It is, simply, watermelon, feta cheese, seeds (I use sunflower; you can use any nuts or seeds you like) and fresh mint. That's it. Chop the melon to bite-sized pieces, crumble in some feta, sprinkle some nuts/seeds/ and chopped mint. DONE! I eat this any time I'm hungry and don't feel like cooking. (bowl size commensurate with appetite!). Cheers!
Question ? What is the actual reason to use "Feta Cheese" I have tried it several times and prefer almost any other cheese (except Limberger),depending on the application .
That’s a good question. In classic Greek salad, you would combine tomatoes, cucumber, and red onions with olives and feta cheese. They just go together! In this salad, the twist is the watermelon.
