Cherry Limeade Ice Cream Pie

This ice cream pie is the perfect treat for beating the heat on a hot summer’s day. The pie takes little time to make and no time at all to devour. You’ll be glad the recipe makes two!

Ingredients
6 cups vanilla ice cream, softened
1 6-ounce can frozen limeade, thawed
3 to 4 tablespoons juice of maraschino cherries
2 9-inch graham cracker piecrusts
Garnish: whipped cream, lime slices, maraschino cherries

Instructions

  1. Combine ice cream, limeade, and cherry juice in a large mixing bowl.
  2. Beat at low speed with an electric mixer until blended.
  3. Spoon into crust, then freeze 8 hours, or until firm.
  4. Garnish with whipped cream, lime slices, and maraschino cherries.
