Spinach Baby Bell Pepper Popeye Bake

Popeye would definitely approve of this bake. Packed with spinach, smoky bacon, rich Gruyère, and sweet baby bell peppers, this dish turns everyday ingredients into a cozy, crowd-pleasing meal. One bite and you’ll be reaching for seconds (and maybe flexing your muscles just a little).

Ingredients
2 tablespoons olive oil, divided
10 ounces frozen chopped spinach, thawed and squeezed of liquid
1/2 cup grated Gruyère cheese
1/2 cup half and half
3 slices crisp cooked bacon, chopped
2 eggs
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon ground nutmeg
6 to 10 baby bell peppers, seeded and halved

Instructions

  1. Preheat oven to 400°F. Using 1 tablespoon of olive oil, coat an 8x8-inch baking dish.
  2. In a bowl, combine spinach, Gruyère, half and half, bacon, eggs, salt, black pepper, and nutmeg. Stir to combine. Pour mixture into prepared baking dish.
  3. Place bell peppers cut side down on top of spinach mixture in one layer. Drizzle with remaining tablespoon of olive oil.
  4. Bake for 20 to 25 minutes, or until set.
