Mashed Potatoes with Chives is one of our popular recipes. Sometimes, a simple, classic dish is what we need. Fresh chives give this simple, classic dish a tangy seasonal flavor. 

Keep a pot of them growing in your kitchen all winter and in your garden in the summer. Salt is important for good mashed potatoes; taste as you go.

Ingredients
8 large all-purpose potatoes
1/2 cup hot milk
4 tablespoons butter
4 tablespoons finely chopped fresh chives
Salt and white pepper

Instructions

  1. Peel and quarter potatoes.
  2. Boil in salted water to cover until tender.
  3. Drain, return to pan, add hot milk, butter, chives, and salt and pepper to taste.
  4. Mash thoroughly and whip lightly with a fork.
