I like Lentil Stew because Lentils cook in about 30 minutes; whereas other types of peas and beans take much longer to cook;
I agree. They're a great base for a very healthy meal that doesn't take hours to make. Add some rinsed quinoa and you have a really healthy and complete meal.

This is a great dish. Added ham to it and two tablespoons of instant tapioca for thickening. And, I used 64oz of vegetable stock rather than 48oz just to thin it out a bit. Served it with some nice bread and white wine. And lots of leftovers!
I do a similar chicken soup with 3/4 cup each, lentils, barley, black eye peas, 1/2 chicken breast, and bay leaves or summer savory. Enjoy!
