You guys use WAAYYY too much sugar and heavy cream in your recipes!!! It's a sure recipe for diabetes and heart attacks. All you need to do is core apples (peel if desired) and plums and cook down until apples are soft. Absolutely no sugar is necessary if you use sweet varieties of apples such as galas, red delicious, fujis etc. Don't use sour varieties like Jonathans or Granny Smith. Also no lemon juice is necessary. Just cook the fruit down and put in small jars. Freeze those you aren't using within a week. Put others you are using in the fridge.

Any way to substitute stevia for sugar?
I just replied above. As long as you use a sweet apple like fujis, galas, red delicious, there is absolutely no need whatsoever for any sugar. The fruit is sweet enough. Just core and pit fruit and cook down. You can opt to peel the fruit, but I don't as the peels contain pectic which naturally firms up the sauce just slightly. Enjoy!
Try organic palm sugar if you're not a fan of processed white sugar(or sugar in the raw or honey)I've always found that stevia has a chemical aftertaste... Maybe its just me idk if you try the honey make sure to use the palest you can find as the darker the honey the bolder the flavor(something like buckwheat would really interfere with the flavor profile) try tupelo if you can get your hands on it
