Fruit Salad With Maple Mint Dressing

You can mix and match all types of fruit when making this refreshing Fruit Salad With Maple Mint Dressing. Fruit is delightful at its peak of freshness, but the star of this recipe is the dressing. Add a scoop of cottage cheese for a light lunch or eat as a snack any time of day.

Ingredients
2 plums, pitted and diced
2 oranges, peeled, seeded, and cut into pieces
2 kiwifruit, peeled and diced
2 cups diced cantaloupe
2 cups diced honeydew melon
1 cup diced pineapple
1 cup blueberries
1 cup sliced strawberries
1 can (15 ounces) sliced peaches in natural juice, juice reserved
2 teaspoons pure maple syrup, or to taste
1/4 cup chopped fresh mint

Instructions

In a large bowl, combine the fruit, one kind at a time, tossing gently after each addition. In a small bowl, mix together the reserved peach juice with maple syrup and whisk until completely combined. Stir in the chopped mint. Pour the dressing over the fruit salad and stir. Refrigerate for at least 1 hour. Stir again before serving.
