Farro Salad With Basil and Feta

Farro, an ancient grain, is cropping up on menus everywhere and can be found in grocery and health food stores. Many compare it to spelt, though they’re in fact different grains—farro is nuttier and more flavorful. Give the grain a try in this healthy Farro Salad With Basil and Feta.

Ingredients
3 cups cooked farro
4 to 5 sun-dried tomatoes, roughly chopped
1/3 cup crumbled feta cheese
6 to 8 basil leaves, roughly chopped
2 to 3 scallions, finely chopped
1/4 cup olive oil
1 tablespoon balsamic or red-wine vinegar

Instructions

In a bowl, combine farro, tomatoes, feta, basil, and scallions.

In a separate bowl, whisk together oil and vinegar. Pour over salad and stir to incorporate.
