Dressing:

Ingredients
1/3 cup mayonnaise
3 tablespoons apple cider vinegar
1 tablespoon sugar
1 teaspoon caraway seeds

Instructions

In a bowl, combine all ingredients and stir until well blended.

Slaw:

Ingredients
4 cups coarsely shredded zucchini
1/4 cup thinly sliced green onion
2 Granny Smith apples, cored and diced
1 Fuji apple
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper

Instructions

  1. In a bowl, combine zucchini, green onions, and apples. 
  2. Pour dressing over the zucchini mixture and toss well to coat. Add salt and pepper and toss again. 
  3. Cover and chill for at least 3 hours.
  4. To serve, use a slotted spoon to transfer slaw into a serving bowl and discard any liquid left behind.
