Strawberry Walnut Quick Bread with Strawberry Spread

Why do bananas get all the fun of being in a quick bread? This recipe for Strawberry Walnut Quick Bread with Strawberry Spread is the perfect breakfast treat or a snack on the go. It is moist and bursting with sweet strawberries, healthy walnuts, and spicy cinnamon.

BREAD:

Ingredients
3 cups all-purpose flour
2 cups sugar
1 teaspoon salt
1 teaspoon baking soda
1 tablespoon cinnamon
4 eggs, beaten
1 1⁄4 cups vegetable oil
1 1⁄2 cups chopped walnuts
2 cups frozen sliced strawberries, with juice, thawed

Instructions

  1. Preheat oven to 350°F. Grease two 9x5-inch loaf pans and set aside.

  2. Combine dry ingredients in a bowl. Add eggs and oil and mix to blend. Add walnuts and strawberries with juice and stir to blend. 

  3. Pour mixture into the prepared loaf pans. Bake for an hour or until a toothpick inserted into the center comes out clean. 

  4. Let cool for 5 minutes before removing loaves from the pans and cooling on wire racks.

For spread:

Ingredients
8 ounces cream cheese, softened
1⁄2 cup fresh chopped strawberries

Instructions

  1. In a bowl, combine cream cheese with the sliced strawberries. 

  2. Spread on sliced strawberry bread.
