Cranberry Relish

Ingredients
1 tablespoon vegetable oil
1 small onion, chopped
1 cup brown sugar
2/3 cup red-wine vinegar
1 tablespoon freshly grated ginger
1 teaspoon ground black pepper
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon ground coriander
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1 bay leaf
3 cups cranberries, washed and picked over
2 pears, peeled, cored, and diced

Instructions

In a saucepan, heat oil and saute onions until soft. Add brown sugar, vinegar, spices, and bay leaf. Simmer until syrupy, about 20 minutes. Add cranberries and pears and simmer another 15 minutes. Remove bay leaf and serve at room temperature.
