Ingredients
1 pound boneless chicken breasts, cut into bite-sized pieces
1 tablespoon olive oil
3 stalks celery, chopped
3 medium-size carrots, chopped
1 medium onion, chopped
1 tablespoon minced garlic
1 can (14.5-ounces) chicken broth
1 can (15-ounces) pumpkin puree
1 can (15.5-ounces) great northern beans, drained and rinsed
1 teaspoon ground nutmeg
1/4 teaspoon white pepper
1 teaspoon salt

Instructions

In a saucepan, warm oil. Add chicken and cook until no longer pink. Add celery, carrots, onions, and garlic. Saute until vegetables are tender. 

Add broth, pumpkin, beans, nutmeg, white pepper, and salt. Simmer on low for 30 minutes. Season with salt and pepper to taste.
