I just had to peel a dozen fresh eggs (cooked of course) and what a mess. The eggs were probably less than a week old from my own flock. I'm going to try the baking soda/roll under water to crack the shells tricks next time. Takes forever to peel them when they're fresh and it's never a pretty sight.
According to the food scientist Kenji Lopez Alt if you put your eggs in an ice bath for a few minutes after you have removed them from the pot and then peel them under cold water, the water helps separate the shell from the egg white, helping to prevent pock marked eggs.
My wife’s boiled hack, lift egg from boiling water with spoon, count for 10 seconds, watch as egg shell dries , if egg shell dries within 10 seconds egg is cooked! Works every time :)
After reading the "recipe" for boiled eggs and seeing comment about peeling, I had to comment. I found two ways to boil eggs successfully. My way is to cover eggs with water, bring to a full boil, turn heat down to low and cook for 12 minutes, no matter the size. Another way I found on internet was to put water in the pot about half way up on the eggs, bring to boil, cover, reduce to low for about 5 minutes, then turn off and leave for about 10 more minutes.
But to peel eggs, after they are through cooking, I soak in cold water several times until the water stays cool, then press down on the eggs in the water, one at a time, until shell cracks then roll back and forth under water until the entire shell is cracked then peel. They usually peel with no problem.
At the end of the boiling cycle sprinkle a little bit of baking soda in the water. Then run them under cold water, shells just slide off easily.
I have boiled eggs for breakfast and salads for 5 decades and find your boil advice somewhat questionable. why should it take so long the ALMANAC way when you can just boil for 6 minutes and cool under running water for a minute or two and peel easily.i love mag but things must be slow when u proffer boil advice that is wrong and not needed. stay ouf the kitchen and do what y'all do best.

I find that steaming eggs works far better than boiling.

I have to say, boiling eggs is not a difficult task. What I was truly hoping for here was to understand how to do it so that the shell can be peeled easily from the finished product. This was not addressed!
I believe the term "boiled" refers to the method in which they are prepared...fried eggs & scrambled eggs are all "cooked eggs". But the way they are cooked determines the outcome of the textured, look & taste of the egg. Love the Old Farmers Almanac!!!
