Crunchy with a bit of chewiness, our wholesome Winter Energy Cookies taste like a granola bar in a cookie with wheat germ, whole wheat flour, raisins, nuts, and chocolate chips.

Great in the morning with coffee, as a wholesome snack, or as quick fuel for an outdoor activity or exercise!

 

 

Ingredients
1 cup (2 sticks) unsalted butter, softened
1-1/2 cups brown sugar
1/3 cup molasses
1/3 cup smooth peanut butter
2 eggs
1-1/2 teaspoons vanilla extract
1-1/2 cups whole wheat flour
1 cup all-purpose flour
1 cup toasted wheat germ
1-1/2 teaspoons baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
2 cups old-fashioned oats
1 cup raisins
1 cup chocolate chips
1 cup chopped walnuts or peanuts

Instructions

Using an electric mixer, cream together butter, brown sugar, molasses, and peanut butter. Blend in eggs and vanilla.

In a bowl, combine flours, wheat germ, baking soda, salt, and cinnamon. Stir dry ingredients into creamed mixture until evenly blended. Add oats, raisins, chocolate chips, and nuts. Refrigerate for at least 1 hour.

Preheat oven to 350°F. Grease baking sheets or line with parchment paper.

Shape dough into balls using 1/4 cup of dough per cookie. Place on baking sheets, leaving 3 inches between cookies. Flatten slightly with a fork. Bake for 15 to 18 minutes, or until tops are soft to the touch. Cool on baking sheets for 5 minutes, then transfer to a rack to cool.
