Ranger Cookies

We’re not sure how these Ranger Cookies got their name, but they’ve been a lunch-box favorite since the 1950s. These cookies are crunchy, crispy, and chewy! Easy to make and have a lovely light butter and sugar taste. Need a little extra sweet? Add 1 cup of chocolate or butterscotch chips if you prefer!

Ingredients
1 cup (2 sticks) butter
1 cup packed brown sugar
1 cup sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 cups uncooked rolled oats
2 cups Rice Krispies or Special K cereal
2 cups coconut
Instructions

Cream together butter and sugars. Add eggs and vanilla and mix well. Stir together flour, baking soda, baking powder, and salt and add to dough, mixing well. Stir in oats, cereal, and coconut. Drop by rounded spoonfuls onto cookie sheets and bake at 350 degrees F for 8 to 10 minutes.
