Potato Bacon Casserole

This creamy Potato Bacon Casserole is pure comfort food! Crispy bacon, tender potatoes, and melted cheese come together in one hearty dish that’s always a crowd-pleaser. Perfect for family dinners, holiday gatherings, or a buffet, this casserole can be prepped ahead of time and baked whenever it’s most convenient—making it both delicious and practical.

Ingredients
6 potatoes
4 strips bacon
1/3 cup chopped onion
1/3 cup chopped green bell pepper
1 teaspoon salt
1/8 teaspoon freshly ground black pepper
3 tablespoons butter
1/8 cup hot milk
2 eggs
1/2 cup shredded sharp cheddar cheese

Instructions

  1. In a pot of salted water, boil potatoes until tender.
  2. Preheat oven to 350°F. Butter a large casserole.
  3. While potatoes are cooking, fry bacon until crisp and break into small pieces. In 2 tablespoons of bacon drippings, cook onions and bell peppers until tender.
  4. Using an electric mixer, beat together potatoes, salt, pepper, butter and milk. Begin beating at low speed and move up gradually to high speed, beating until potatoes are fluffy. Add eggs, cheese, onions, bell peppers, and bacon. Beat until well mixed.
  5. Scrape into prepared casserole and bake for 30 to 35 minutes, or until golden.
