Mother’s Forgotten Mint Cookies

These meringue-like cookies are placed in a preheated oven, which is immediately turned off, and they bake overnight as the oven cools down! An easy and fun way to concoct a batch of sweets—and fancy enough for a special event.

Ingredients
2 egg whites, at room temperature
3/4 cup sugar
3/4 cup chocolate chips or 1/2 cup mini chocolate chips
4 drops mint extract (about 1/4 teaspoon)
1 to 2 drops of green food coloring (optional)

Instructions

  1. Preheat oven to 375°F. Line one or two baking sheets with parchment paper.
  2. Using an electric hand or stand mixer, beat egg whites until stiff, gradually adding sugar. Fold in chocolate chips, mint extract, and food coloring (optional).
  3. Drop mixture by teaspoonfuls onto prepared baking sheets, using an upward twist of the spoon to form peaks. Place in a preheated oven and turn the oven off immediately. Leave in the oven with the door closed overnight.
  4. In the morning, remove cookies from oven and store in an air-tight container!

You could cut and paste them to a word document and save them in a file called: Recipes>Farmer's Almanac. I even do this with downloadable recipes because I need to change the font size and color in order to see the words.

You could simply write them down on a recipe card. Saves paper and space when compared to a full sheet of paper.
