Coach Kelly’s Snack Cabinet Salad
Garden Salad:
Lettuce of choice (this is organic hydroponic bib)
Cucumber
Radish
Green Bell Pepper (chopped)
Red Bell Pepper (chopped)
Red Cabbage (shredded)
Carrot (shredded)
Celery
Toppings:
Fresh ground pepper
Bleu Cheese
Sunflower Seeds
Pumpkin Seeds
Golden Raisins
Slivered Almonds
Dressing: Extra Virgin Olive Oil & Balsamic Vinegar
Toss salad ingredients add toppings to taste. I’m not a big salad or vegetable fan, but I love this salad! I chose golden raisins instead of craisins because they are super sweet and have no added sugar. The seeds and almonds add crunchiness (instead of croutons) and the bleu cheese and almonds add protein!
We make it with dill for a little zing. You can add fresh dill or use pickle juice instead of vinegar. Cut salt if you do. Yummy!
I can get the first two salads to show on my computer, then the ads take over and I can't pull up any more recipes, even after deleting the ads.
My mother used to make "Farmer's Salad" (I don't know why she called it "Farmer's". No measurements. Sorry. It consists of:
sliced cucumber
torn lettuce (or sliced)
sliced onion
sliced radishes
shredded or sliced carrots
sour cream (depending on the size of the salad, either a pint or so. It depended on how "gloppy" we wanted it.
It's all up to the person who's making the salad. We would have that and a cup of tomato soup. Or ... just as a big salad.
I make this dish frequently as a one dish meal. The recipe below is the plain version, you can add popcorn shrimp, bacon, ham, etc if you wish.
2 cups cooked rice cooled to room temperature
4 green onions chopped
1 can black beans drained and rinsed
1 medium tomato diced
½ cup shredded cheddar cheese
ÂĽ cup light Italian dressing
1 tablespoon lime juice
1 tablespoon fresh clipped parsley
Combine ingredients in large bowl pour dressing and lime juice over rice and toss.
