Are these best dates AFTER fall dates? I've always heard autumn is best for sauerkraut..

Yes, these would be the best days to begin fermentation.
I was always taught to pickle anything the moon must NOT be in the foot or the bowels or it will spoil. I avoid anything below the knees or the "Old of the Moon".
