I'm assuming you can use gluten free oats? Also, is the flour to thicken the cookie batter a little & could you substitute corn starch or something like GF Bisquick? That would make it gluten free.
Yes, you can substitute quick oats for old-fashioned rolled oats. However, when recipes call for rolled oats they tend to include less liquid. You may need to add a small amount of liquid if you replace the rolled oats with quick oats. Keep an eye out as you are mixing the batter.
