Kielbasa With White Beans and Tomato

This Kielbasa With White Beans dish is delicious, quick, and easy. Made with meat and vegetables on the stove, it’s warm and comforting, too. Serve with crusty French bread to complete the meal.

If you don’t like spinach, take it out. If you want more beans or tomatoes, add them in! You can make this dish your own.

Ingredients
1 tablespoon butter
1 turkey kielbasa sausage (16 ounces), sliced into coins
2 cans (15.5 ounces each) cannellini beans, with liquid
1 can (14.5 ounces) diced fire-roasted tomatoes
1 tablespoon sugar, or to taste
1/2 teaspoon dried basil
salt and freshly ground black pepper, to taste
4 cups loosely packed fresh baby spinach
1/4 cup grated Parmesan cheese, for topping

Instructions

  1. Melt butter in a large skillet or hot pot over medium-high heat. Add kielbasa and lightly brown on each side.
  2. Add beans, tomatoes, sugar, basil, and salt and pepper. Stir.
  3. Bring to a boil and then reduce heat to medium and simmer for 10 minutes.
  4. Stir in spinach right before serving. Remove from heat. Pass Parmesan at the table.
