Rice can get boring, so it makes a big difference when you add color and interest! This Colorful Rice recipe adds protein, flavor, and nutrition for a more delicious, healthier side dish. Add color to your meals and your life!

Nutritionist Patty Sanders will show you how to make her Colorful Rice dish, adding colorful insight along the way!

Ingredients
2 cups of cooked rice or whole grain of choice
2 tablespoons of almond, sliced
2 tablespoons peppers (any color), chopped
2 tablespoons of hemp seeds
2 tablespoons of scallions or any onion, chopped
2 tablespoons of cilantro or any green herb, chopped
2 tablespoons of sunflower seeds
2 tablespoons of grated carrots
1/2 teaspoon or more of lemon zest, to taste

Instructions

Prepare rice or whole grain as specified on packaging. When the rice or whole grain is finished cooking, mix in all the other ingredients.

Optional:  Add 1 Tablespoon of oil or a vinaigrette right before serving.
