I do that as well, change the water every 30- 45 min or so,,,, never let it get to room temp and no one ever got sick from my food. Ive been cooking turkey for over 50 years now,,,,,, it defrosts in approx 3 hrs,,, its safe, if the sink is too small, I turn it over every half hour. of course, youve got to be " on top of things"
I also make my stuffing, w drippings and Never inside the cavity,,,,,,, too scary for me, why take the risk with your loved ones?
