I remember on my childhood friend’s farm and they had a small shed that had a mound of earth piled up to 3ft where they buried their root vegetables. We would go to the shed and pull carrots out of the earth for dinner….the vegetables were as fresh as the day they were picked. There was a time limit though…everything had to be transferred to the house by January or it would be frozen in the earth when the big deep freeze of winter happened in Southern Ontario.
