According to the tea ceremony master that I observed in Insadong (Seoul), it's not good to have the water too hot or you lose some of the benefit from the tea. He put boiling water into a ceramic pot and let it sit for a couple minutes, then added the tealeaves. He let them steep for about 3 minutes, then poured cups for us. Then, he proceeded to demonstrate that you can use the same leaves up to 5 times, but they taste different each time. He was using "White Lotus" tea, with lotus flower petals in it.
