Give a classic cookie combo a vibrant upgrade! These Lemon-Poppy Seed-Raspberry Sandwich Cookies are the perfect balance of tart, sweet, and buttery. The zesty lemon dough and poppy seeds create a delicate crunch, while the raspberry filling adds a festive burst of color and flavor. Perfect for every time of year: from spring gatherings to the holidays!

Ingredients
1 cup (2 sticks) unsalted butter
1/2 cup sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
zest of 1 lemon
2 cups all-purpose flour
1/3 cup poppy seeds
seedless raspberry jam

Instructions

  1. In an electric mixer set at medium-high speed, cream the butter, sugar, vanilla, salt, and lemon zest until fluffy—about 3 minutes.
  2. Add the flour and poppy seeds, mixing on low speed until just combined.
  3. Form the dough into two disks and wrap in plastic wrap. Chill for at least 30 minutes.
  4. Preheat the oven to 350°F.
  5. On a floured surface, roll out the dough to a ¼-inch thickness. Using a 2-inch cookie cutter (scalloped, if possible, for a pretty edge) cut rounds.
  6. Place the dough rounds on ungreased cookie sheets about ½ inch apart. Bake for 12 to 15 minutes, or until the edges begin to brown. Do not overcook; the cookies will continue to bake after being removed from the oven.
  7. Cool on the cookie sheets for several minutes, then transfer to racks when the cookies are firm.
  8. After the cookies have cooled, place 1 tablespoon of raspberry jam on the bottom of one cookie and then gently press the bottom of another cookie into it to spread the jam. Repeat with all of the cookies.
