A lot of this information is outdated or incorrect or rather strange.
Red meat has not been shown on its own to cause increased incidences of disease.
B12 is very difficult to get from plant sources alone, and thus vegans have to supplement.
A whole large potato has a lot more calories than a single whole egg. Eggs are a superfood, so why would I want to eat a ton of potatoes instead of a couple of eggs?
