Hello and thank you for the article! It gives some good tips. I am currently on a diet for health improvement and some items are no-noes at the moment. One of those is wheat (even whole wheat) but barley and millet are not only allowed but encouraged. I have been trying to find a recipe that would include both and exclude yeast but I only find gluten-free recipes or just with barley. Today I tried to make my own and it was... ok :D I used 1 cup millet flour and 1 cup barley and 2/3 water. it was good but I needed to use quite a bit of ghee. I was wondering if you or any of the readers would have some ideas how to make alternative flatbread with these ingradients :)
