This easy recipe for Minted Couscous is refreshingly delicious and takes no time at all to put together. If you want more lemon flavor, squeeze a little lemon over the top of individual servings.

Ingredients
2 cans chicken broth
3 cups couscous
1/2 cup toasted pine nuts
4 scallions, chopped
1/4 to 1/2 cup chopped fresh mint
2 tablespoons fresh dill
2 tablespoons lemon juice

Instructions

Bring chicken broth to a boil, remove from heat, and stir in couscous. Cover and let stand 5 minutes, then fluff with a fork. Add pine nuts, scallions, mint, dill, lemon juice, and stir to combine.
