In old-fashioned cookbooks, you’ll find recipes for berry “fool”—which is a simple dessert made of fork-crushed berries that are sweetened and then folded into thick whipped cream. Gooseberries make the perfect “fool” by mixing tart and sweet flavors.

Serve in a cocktail glass for a touch of elegance, or use an ice cream, sherbet, or dessert dish.

Ingredients
2 cups fresh gooseberries, papery outer skin removed
2 cups water
1/2 to 3/4 cup sugar
3/4 cup heavy cream

Instructions

  1. In a small saucepan over high heat, add gooseberries to water and bring to a boil. Lower to simmer and cook 8 to 10 minutes, until tender.
  2. Remove from heat and stir in 1/2 cup sugar; mash gently to incorporate.
  3. Taste and add more sugar if desired. Let cool to room temperature.
  4. In a separate bowl, whip cream to soft peaks. Fold in gooseberries. 

Spoon into cocktail glasses or small cups and refrigerate until well chilled, at least 1 hour.
