I wonder if Butternut Squash can be substituted for sweet potatoes? To me the texture and flavor are very similar. I do have lots of squash but would have to buy sweet potatoes.
My favorite sweet potato isn't even a recipe. Wrap in heavy foil and bake on a campfire.
Eating by the campfire with a little butter and cinnamon just enhances the flavor!

Fried sweet potatoes in butter with sauteed onions. First bake, then peel and add to pan with sauteed onions and butter. Season with salt!! Yum. The cake the casserole and the biscuits here look like winners to!! The!!
Those sound delicious! We do have a Sweet Potato and Celery Root Pancake recipe, but it’s not gluten free. Try experimenting with different types of flour, and maybe you can make a yummy gluten free version!
